Save the carcass!

When you purchase a chicken from Credo Farms, we hope that you don’t throw away the carcass. Put it back in the pot (or slow cooker), cover it with water and simmer it with some vegetables and herbs until you’ve gotten all of the goodness from the joints, skin, and bones.

If you simmer it for at least twelve hours, you will get most of what that carcass has to offer you: a rich, gelatinous broth that is healing and delicious. If you’re already doing this, and you’d like to increase the nutritional value of your homemade stock, consider picking up a bag of chicken feet or chicken heads to throw in. Chicken heads and feet contribute both flavor and more nutrients to the broth. Once you’ve simmered them down they should be quite soft: crush them gently to release the last bits of goodness and then strain through a fine mesh sieve to avoid bone grit.
